2014 was a breakout year for kale! This humble cruciferous vegetble, which comes in a whopping 50 varieties, made its way into the hearts and stomachs of families everywhere. In fact, we don't know too many kids out there who didn't tried a kale chip or two this year. Joining us on the show this week is Catherine Walthers, author of KALE GLORIOUS KALE, who tells us everything there is to know about kale--- storing and prepping tips, creative ideas for adding it to everything from granola to soups to salads, why kale loves to be massaged---and she also shares her recipe for Potato Kale Latkes. Whole grains are nutritious and versatile, yet a growing number of consumers are shying away from eating them. On this week's show, we share insights into whole grains --- what are they, what nutrients do they provide, how can they be added to a family-pleasing diet --- and we talk to an expert from the Whole Grains Council about why celiac disease is on the rise and why more consumers than ever are turning to gluten-free diets. Chia seeds are nutritious---they're rich in heart-healthy omega-3 fats as well as fiber---and we love using them in everything from smoothies to puddings to meatballs. On this week's show, we dish about our newest recipes for Chocolate Chia Pudding and Cha Cha Cha Chia Meatballs. The meatballs call for chia seeds instead of the usual breadcrumbs, so they’re gluten free, and the pudding is so delicious, your kids will love it as an after-school snack or dessert.
