Cooking with the Moms
Food trucks are all the rage, and this month our friends with CanolaInfo are celebrating their favorite food trucks across the USA with a special Street Eats Recipe Collection. CanolaInfo is one of our blog sponsors, so Liz and I thought it would be fun to do a post on the food truck scene here in Boston. Of course, that meant we had to visit a few Bean Town food trucks, which turned out to be easier said than done. On this week's show, we take you along on my food truck adventure (Liz was out of town, so she missed all the fun), introduce you to Jen, a fan from Singapore who stopped by for a visit, serve up a recipe for Roasted Beet Salad with a canola/citrus vinaigrette, and tell you about our latest giveaway for a bamboo salad bowl set.

We love nothing more than the challenge of taking family-favorite recipes and giving them a healthy and nutrient-rich makeover. Recently we teamed up with Holland House -- they make super-convenient, flavor-packed cooking wines and premium vinegars -- for a Meal Makeover Sweepstakes. A total of three winners will be selected this spring, and we'll work with each of them on their personal recipe makeover. Winner #1, Lolli, a mom of five from the DC area, was already announced and we chose her chicken cordon bleu recipe for our first "fix!" Tune into the show for our Cheesy Chicken Cordon Bleu and the role cooking wine plays in boosting a recipe’s flavor.

If you're trying to watch your weight and eat a diet rich in wholesome and healthy ingredients, the last thing you may want on Mother's Day is a breakfast-in-bed menu filled with sticky buns and donuts. On this week's podcast, we serve up two nutritious recipes --- Blueberry Peanut Butter Smoothies (an incredibly odd yet oh-so delicious flavor combo) and Silver Dollar Banana Blueberry Pancakes -- easy enough for kids and dads to make. We also reflect back on the valuable cooking lessons we learned from our mothers.

Janice recently traveled to Austin, TX and joined 50 fellow dietitians for the Beans for a Better Life seminar, sponsored by the Northarvest Bean Growers Association. She ate dry beans in a variety of dishes, discussed their stellar nutritional benefits, and learned why they are called dry beans...not dried beans. On this week's show, podcast, we share her vast and new-found knowledge about all types of dry beans--pinto, navy, kidney and serve up a recipe from Chef Ann Cooper for White Bean Puree with Pita Bread. Did you know that one pound, or 2 cups, of dry beans equals 5 to 6 cups of cooked beans which equals three, 15-ounce cans? Tune into our show to learn more about this amazing legume.
